PURPOSE:To carry out uniform aging of wheat flour in a short time, by mixing wheat with an aging promoter with screw meshing in a barrel and pulverizing an extruding the wheat with a kneading disk. CONSTITUTION:Foreign materials, e.g. crushed stone, wheat straw, grains of different kinds, metal pieces, etc., are removed from raw material wheat, which is then washed, drained and fed from an autofeeder 6 into a raw material feed inlet 5. An aging promoter is simultaneously fed fro man autofeeder 7 into the raw material feed inlet 5. Screws 3 are rotated, and the wheat is mixed with the aging promoter while injecting water by a diaphragm pump 9 to feed the resultant mixture forward. The wheat which is fed forward and reach kneading disks 14 is pulverized and discharged from an orifice 13 of a die 12 by the wheat fed from the back. Vitamin C, acetic acid, propionic acid, ethyl alcohol, etc., may be cited as the aging promoter. |
