A description is given of the use of a shirred casing, such as a sausage skin, for the packaging of portions of compositions in paste form such as sausagemeat, in particular for the production of sausages. The shirred casing possesses an outward-facing helical main folding structure, and consists of a film which is curved to form a tube and whose edges form an overlap seam which is arranged in spiral coils about the longitudinal axis of the shirred casing, and the coils of which have the same direction of rotation as the main folding structure. In order to use the casing, a composition in paste form, in particular sausagemeat, is pressed into the continuously rotating shirred casing, the shirring being eliminated. After a desired length of casing has been filled, the casing is twisted off. The rotation of the casing during the filling operation takes place in a direction of rotation, seen in the filling direction, which corresponds to the direction of rotation of the coils of the main folding structure. The casing preferred for this use exhibits a main folding structure and seam zone which both have the shape of a right-hand helical thread. <IMAGE> |
