PURPOSE:To obtain the titled food, having good plasticity and simply packaged, transported, stored, etc., without destroying the tissue thereof, by feeding a humidifying gas to humidity a food and compression molding the resultant humidified food. CONSTITUTION:A humidifying gas, preferably 60-75% relative humidity is fed to humidify a dried food, preferably by the forced circulation, and the resultant humidified food is then compression molded to afford the aimed food. Preferably, a dried food of cabbage, Chinese cabbage, onion, etc., is humidified to give 0.6-0.7 moisture activity value and 13-20% water content and then compressed to 1/13-1/18 volume under 5-15kg/cm<2> pressure. |
