PURPOSE:To obtain the titled easily digestible food, by mixing a proper amount of powdery starchy raw material to steamed soybean, adjusting the surface water-content to the level suitable for the malt-preparation, inoculating seed malt to the mixture, and using the obtained soybean malt as a raw material of cheese, sausage, etc. CONSTITUTION:Steamed soybean is mixed and coated with >=10wt% powdery starchy raw material, conditioned to control the surface water-content to the level suitable for malt-preparation, inoculated with seed malt, and fermented to obtain soybean malt. The soybean malt is used as a raw material of cheese, sausage, hamburger steak, fish paste product, etc., or added to potage, soya milk, dressing, etc., after the treatment such as grinding, auto-digestion, etc. It can be added to noodle, bread, biscuit, etc., in the form of dried powder. A health-complementing processed food having excellent taste and flavor and high digestibility and nutritive value can be produced by this process. |
