PURPOSE:To obtain an expanded and dried instant noodle free from gelatinized layer on the surface and having excellent palatability, by applying an acidic aqueous solution to raw noodle containing gas-generating alkaline agent, steaming the noodle, and expanding and drying the product. CONSTITUTION:An acidic aqueous solution is attached to the surface of raw noodle 3 containing a gas-generating alkaline agent to enable the vigorous generation of gas during the steaming of the noodle. Since the dense surface layer of the raw noodle is softened and eliminated by the bubbles of the gas, the formation of the gelatinized surface layer is inhibited and the gelatinization is proceeded sufficiently to the core part of the noodle. The evaporated traces of the gas and steam are dispersed in the form of bubbles 7 in the steamed and dried noodle, and an expanded and dried instant noodle having high expansion ratio can be produced. |
