Thermal stability; Almost inactivated in 0.05M tris-hydrochloric acid buffer solution by heating at <=50 deg.C for 30 min, and almost completely inactivated at >=70 deg.C. USE:Capable of synthesizing gamma-cyclodextrin without contamination by alpha-and beta- cyclodextrin specifically from starch, amylose, amylopectin, glycogen, etc. PREPARATION:A microorganism belonging to the genus Bacillus and capable of producing gamma-cyclodextrin synthetase A, e.g. Bacillus sp. No.313 (FERM-P No.8,366), is cultivated to collect the d gamma-cyclodextrin synthetase A from the resultant culture. |
