An herb extract, particularly a member of the Labiatae family of herbs, and especially a rosemary or sage extract, made with acceptable food-grade solvents, in a form which is completely oil-soluble, devoid of pro-oxidant materials, decolorised and, if desired, deflavourised. Such an extract may be prepared by the steps of extracting Labiatae herbal material with an approved food-grade edible solvent; partially removing the solvent, such that the remaining solvent contains 5 to 50% of the extract; cooling the remaining, extract-containing solvent; removing the acetone-insoluble material; and removing the solvent; in which the acetone-insoluble material is relatively soluble in the food- grade solvent when warm and insoluble when cold. <IMAGE> |
