PURPOSE:To produce frozen noodle which can be thawed and reconstituted with an electronic range to give reconstituted noodle having nonvicid texture and capable of keeping the springy feeling for a long period, by coating the surface of noodle with an adhesive paste. CONSTITUTION:The objective noodle can be produced by coating the surface of noodle uniformly with an adhesive paste (preferably xanthan gum, sodium alginate, etc.), and freezing (preferably quickly freezing) the noodle. The amount of the paste is preferably 50-200ppm (dry basis) based on the weight of the noodle. |
