PURPOSE:The titled oil, obtained by adding a fractionated lecithin to an edible oil and having function of ready emulsifiability even in home without using a stabilizer, e.g. gum, when preparing a dressing. CONSTITUTION:An oil for exclusive use as a dressing obtained by adding preferably 0.1-0.7wt.% fractionated lecithin to an edible oil and dissolving the fractionated lecithin therein while heating at 65-75 deg.C. Preferably, the fractionated lecthin contains phosphatidyl choline. |
