A process is described for producing a natural mushroom aroma concentrate from mushroom fruiting bodies or parts thereof, if necessary, the fruiting bodies being precleaned. The juice is extracted from the fruiting bodies in the dry state and the mushroom juice obtained is evaporated under reduced pressure at a temperature of at most 40 DEG C, the vapour formed is condensed in a cold trap and, if desired, the condensate obtained is preserved in a conventional manner. 30 to 80% by weight of mushroom juice, based on the amount of dried fruiting bodies used, is separated off from the mushroom fruiting bodies. The reduced pressure is at most 73.74 mbar. By means of this process, a concentrate particularly highly enriched in natural mushroom aroma substances is obtained in high purity, saving a wet washing. |
