PURPOSE:To promote the development of gluten by effectively performing the addition of water to wheat flour, by bringing the flour received in a mixing tank to a suspended state and supplying water to the flour held to the suspended state in a mist form. CONSTITUTION:Wheat flour is put in a mixing tank 1 and gas such as air or steam is injected from a nozzle 4, for example, under pressure of 10-15kg to bring the wheat flour to a suspended state. This suspended state is also obtained by rotating a stirring blade 3. That is, the stirring blade 3 is rotated by a rotary shaft 2 while water is injected from the nozzle 4. Whereupon, the wheat flour shows a blown-off state and water is added to each particle of the wheat flour and the addition of water is succeeded for a necessary time. As a result, water is uniformly added to each particle of the wheat flour under stirring evenly without irregularity. |
