PURPOSE:To produce frozen ground meat storable in frozen state keeping the quality, without using condensed phosphoric acid salt, by adding algae extract to raw ground meat and freezing the mixture. CONSTITUTION:Raw ground meat is mixed with >=0.01wt% algae extract such as carrageenan, furcellaran, sodium alginate, etc., and if necessary, with a sugar and/or a sugar alcohol and the mixture is frozen to obtain the objective meat. |
