PURPOSE:To produce a dehydrated processed food having excellent preservation quality and improved visual sensation and taste with safe operability, by dehydrating a food raw material in a hot melt sugaralcohol. CONSTITUTION:A sugaralcohol selected from monosaccharide alcohol, e.g. D- sorbitol or mannitol, disaccharide alcohol e.g. marbit, and reduced starch hy drolyzate, etc., is melted while heating at >=100 deg.C and a food raw material is dipped therein and dehydrated. Alternatively, the sugaralcohol is mixed with the food raw material, and the resultant mixture is heated to >=100 deg.C to melt the sugaralcohol and dehydrate the food raw material. |
