PURPOSE:To produce a sufficiently swollen and softened glutinous food having fragrant flavor, good sense of eating and taste, soft taste and good flavor, by heating grains with saturated steam under pressure and adding a seasoning to season and age the grains. CONSTITUTION:Rice, wheat or miscellaneous grains, e.g. foxtail or Deccan grass, are heat-treated with saturated steam under preferably 2-6kg/cm<2>.G pressure for about 10sec-60min, and the pressure is slowly released to remove the steam without expanding the grains. An optional seasoning is added to the resultant heat-treated grains to season and age the grains at ordinary temperature or while heating for about 30 days. |
