The invention relates to a method and a device for preparing larger quantities of filter coffee by interval brewing. The purpose of the invention is to improve the taste of filter coffee in comparison with known coffee machines and to lower the energy consumption. The object of the invention is to reduce the filter resistance and guarantee uniform extraction of the coffee. According to the invention, between the intervals during coffee brewing the coffee powder in the filter is loosened by generation of a partial vacuum and sucking in air and is mixed with the brewing water. By reducing the filter resistance, the temperature of the brewing water is kept low. Increased leaching out of tanning and bitter substances is thus avoided and the expenditure of energy reduced.
