The culture of ascocarps or fruiting bodies of a species belonging to the genus Morchella. Mycelia are supplied with nutrients and then produce nutrient-rich mycelia and accompanying sclerotia. The mycelia and the accompanying sclerotia store sufficient nutrients for feeding the ascocarps, which develop subsequently. The mycelia and the accompanying sclerotia are established in a nutrient- poor substrate. The mycelial and accompanying sclerotia are caused to induce ascocarp formation by first of all maintaining the mycelia growth and the accompanying sclerotia in an environment which is poor in exogenous nutrients and by exposing the mycelia and the accompanying sclerotia to large quantities of water. Following induction, primordia appear. The period from the appearance of the primordia to halfway towards maturation of the fruiting bodies represents a critical period during which the fruiting bodies have a tendency to abort. During this critical period, particular attention must be directed towards maintaining favourable conditions. The fruiting bodies, which may have developed to maturity, are harvested.
