PURPOSE:To produce a natural mushroom-like flavor capable of providing food or drink with mushroom-like taste or enhancing the flavor, by cultivating Basidiomycetes belonging the family Hydnaceae. CONSTITUTION:Basidiomycetes such as Mycoleptodonoides aitchisonii, Hydnum joponicum, Hydnum aspratum, etc., belonging to the family Hydnaceae, capable of producing at least one phenyltantane derivatives selected from 1-phenyl-3- pentanone, 1-phenyl-3-pentanol, 1-phenyl-1-pentene-3-one and 1-hydroxy-1- phenyl-3-pentanone, is subjected to solid culture or liquid culture and a mushroom flavor comprising the phenylpentanone derivative as a main component is obtained from the culture mixture. |
