PURPOSE:To obtain the titled compound useful as a yellow colorant for food, by pulverizing a sweet potato and extracting the titled compound with an organic solvent. CONSTITUTION:A sweet potato is pulverized, and the aimed carotene is obtained by extraction. The sweet potato is preferably a variety containing >=0.0001% carotene, and examples thereof to be used include OKINAWA No. 100, NORIN No. 1, SHICHIFUKU, BENIKOMACHI, BENIYUTAKA, BENIHAYATO, NAESHIRAZU, MINAMIYUTAKA, etc. Hexane, benzene, toluene, acetone, ethyl acetate, etc., may be used as the organic solvent. The amount thereof to be used is preferably 0.5-50 times based on the sweet potato. The extraction is carried out by a method for washing the sweet potato with water, removing earth and sand, adding the organic solvent thereto, agitating and mixing them under temperature conditions of room temperature - the boiling point of the solvent for 0.5-10hr, filtering the resultant extract, recovering the organic solvent layer and removing the organic solvent from the recovered organic solvent layer under ordinary pressure - reduced pressure to give the aimed carotene.
