PURPOSE:To produce a valuable substance using an enzyme, economically and efficiently without causing the clogging of the filtration membrane, by adding a specific surfactant to an enzymatic reaction liquid and filtering the mixture with an ultrafiltration membrane. CONSTITUTION:An enzymatic rector (A) is charged with an aqueous medium (e.g. inorganic salt), a raw material (e.g. starch), an enzymatic reaction liquid composed of an enzyme (e.g. amylase) to convert the raw material to a valuable substance (e.g. glucose) and 0.0001-2% surfactant (e.g. dodecyl-beta-alanine which is an ampholytic surfactant) based on the enzymatic solution (the step 1). The reaction liquid is maintained at a specific temperature to produce the valuable substance (the step 2). A definite amount of the reaction liquid is transferred to the inner liquid side of the tank (B) furnished with an ultrafiltration membrane (e.g. nylon membrane) and is separated into the inner liquid and the outer liquid by the ultrafiltration membrane. The inner liquid, the aqueous medium having a definite concentration, the raw material and the surfactant are supplied to the tank A, and the valuable substance is separated from the outer liquid (the step 3). After the step 3, the step 2 and the step 3 are repeated to produce the valuable substance from the raw material.
