The patent application is concerned with an apparatus for evacuating preserve jars, and according to the invention a cap supported in an air-tight manner on the upper region of a preserve jar is provided, the cap has a suction-pump connection, and the connection is assigned an intermediate piece provided with holes. The essential advantage is that preserve jars can be evacuated quickly and easily by simple means.
