PURPOSE:To obtain in high yield and in high purity the titled substance without raising pH resulting from ammonia formation and accumulating N- carbamylalanine, by treating 5-benzylhydantoin with an enzymatic system of a specific bacterium while distilling away ammonia. CONSTITUTION:5-Benzylhydantoin (concentration used is preferably 1-10wt%) is treated with an enzymatic system [e.g., Arthrobacter (FERM P-7472), etc.] of a bacterium capable of converting 5-benzylhydantoin to L-phenylalanine while distilling away formed ammonia, to give the aimed compound.
