PURPOSE:To obtain Lactobacillus bifidus multiplication promoting substance- containing composition having more extremely improved promoting action on Lactobacillus bifidus multiplication than various malt extracts on the market, by using peptide obtained by enzymatic decomposition of barley protein as a main component. CONSTITUTION:A barley protein-containing substance selected from barlay, barley malt, an extract of them with warm water or hot water and the extract residue thereof is decomposed with a protease such as actinase, trypsin, etc., to give a decomposition product consisting of a peptide having >=45wt%, prefer ably >=60wt% based on total nitrogen content in the decomposition product of nitrogen and <=23,500 molecular weight and the peptide is blended with a culture medium for Lactobacterium bifidus. |
