The invention relates to a method for industrially preparing precooked-dough bases, especially for pizzas and the like. This method essentially comprises the at least partial removal of the crust which is formed, following cooking, on the lower surface of the dough base and putting the base which has thus had its crust removed on a support for display to the public provided with openings on its lower part; the dough base obtained by this method, which retains its lightness and its crisp nature even after successive recooking, may be used either as a flat bread or as a base for pizzas obtained by adding thereto ingredients of various types, both raw and cooked, and may be subjected to any preservation process. |
