PURPOSE:To obtain the titled alpha-amylase suitable for the high-temperature liquefaction of starch, by culturing specific Bacillus subtilis. CONSTITUTION:Bacillus subtilis capable of producing a heat-resistant alpha-amylase and produced by using the cultured cell of Escherichia coli C600-pTUE 107 (FERM P-7670) as a starting raw material is cultured, and the objective heat- resistant alpha-amylase is separated from the culture product. |
