<p>PURPOSE:To obtain pickles having a low salt content, a good flavor and improved shelf stability, by adding dregs drawn during a process of brewing wine to a pickling bed, blending them, retaining the blend. CONSTITUTION:Dregs drawn during a process of brewing wine (precipitate which is produced, after completion of prefermentation, by squeezing, removing peel, seeds, etc., and occurs in a process after the fermentation) is added to a pickling bed, blended and retained, to give pickles.</p> |
