PURPOSE:To produce a TAKO-YAKI (griddle-cooked dumpling containing octopus meat) which can be eaten easily only by heating, by forming and heating a formable wheat flour pastry containing ingredients and added with proteins and water. CONSTITUTION:1pt.wt. of wheat flour is kneaded with 0.1-1.2pts.wt. of protein (e.g. separated soybean protein), 3-4pts.wt. of water and proper amounts of finely chopped vegetables, octopus meat, seasonings, expanding agent, thickener, reducing sugar, etc. The resultant wheat flour pastry containing ingredients and having formability by itself is formed to a specific form, steamed or heated in an oil and stored in frozen, refrigerated or hot state. |
