PURPOSE:A dehydrator capable of efficiently removing water for a dehydrating sheet, wherein a stirring fan, a cooler and a heater are set in the inner part of a heat-insulating chamber capable of being shut tightly and a circulation system with a dehumidifier is laid outside. CONSTITUTION:A dehydrator for putting a dehydrating target such as fish, meat, etc., in a state where it covered with a dehydrating sheet in the device and for absorbing water, or a dehydrator for removing water from a dehydrating sheet which is absorbing water is constructed by setting the stirring fans 3 and 4, the cooler 5 and the heater 6 in the interior of the heat-insulating chamber 1 and a circulation system for taking out air partially in the chamber 1 to the outside and returning the air to it and attaching the dehumidifier 9 to the circulation system.
