PURPOSE:To obtain a delicious fish body, by dipping a living fish in a quenching liquid maintained to a temperature below freezing point and taking the fish out of the quenching liquid before freezing the inner part of the body, thereby causing the death by shock and the rapid cooling of the fish. CONSTITUTION:A living fish body is thrown into a quenching hopper 1, dropped by the head drop H1 into the quenching tank 2, and dipped into the quenching liquid to cause the killing of the living fish and the freezing of the surface of the body. The fish body is transferred to the separator 17 together with the quenching liquid, and stored in a cooling tank 3 to cool the body uniformly to the core. The quenching liquid 5 is returned via the chilled water tank to the quenching tank 2. The whole fish body is cooled quickly by the melting heat of the frozen part.
