PURPOSE:To obtain oleanolic acid having anti-inflammatory action, antirheumatic action, spermaticidal action, antiulcer action and antidiabetic action, etc., economically in high efficiency, by using the cake left after the removal of clove oil from clove as a raw material, and extracting the material with an organic solvent. CONSTITUTION:Clove oil is separated from clove e.g. by steam-distillation, compression, extraction, etc. The residue is extracted at least twise with an organic solvent such as lower aliphatic ether, lower halogenated alkane, lower aliphatic ester, aromatic hydrocarbon such as benzene, toluene, xylene, etc., or other petroleum-based solvent at a temperature between room temperature and the boiling point of the solvent under agitation or without agitation. Oleanolic acid having high crystallinity and recrystallizable extremely easily can be produced at a low cost by this process.
