PURPOSE:To produce a sugar composed mainly of fructo-oligosaccharide useful in the field of foods such as cariostatic sweetener, low-calorific sweetener, etc., efficiently, by treating sucrose with an enzyme originated from specific Aspergillus niger. CONSTITUTION:Aspergillus niger FERM-P 5886 strain is cultured in a sucrose- containing medium at 25-30 deg.C for 24-96hr, and the proliferated bacterial cells are separated, extracted and purified to obtain an enzyme capable of incising the beta-D-fructofuranoside of sucrose and transferring the produced fructosyl group to the primary hydroxyl group of a sugar. 3.3-300 units of the enzyme (based on 1g of sucrose) is added to a sucrose solution of 20-70wt% concentration, and the transfer reaction is carried out at 4-7pH and 25-65 deg.C for about <=24hr to obtain a sugar composed mainly of fructo-oligosaccharide of the Table. The reaction liquid is heated to deactivate the enzyme, and the sugar is collected by treating with activated carbon, ion exchange resin, etc.
