PURPOSE:To obtain the titled compound useful as an intermediate for a sweetener in high yield industrially advantageously, by esterifying L-phenylalanine with methyl, adding water and a water-immiscible organic solvent to the reaction mixture, and reacting specific two components in the solvent. CONSTITUTION:L-Phenylalanie is esterified with methanol in the presence of a strog acid as a catalyst. The prepared reaction solution is blended with a basic aqueous solution (e.g., aqueous solution of sodium carbonate, etc., the amount of the solution of 1-twice the molar quantity of the strong acid) to neutralize the catalyst and a water-immiscible organic solvent (preferably hydrocarbon or halogenated hydrocarbon) to extract free L-phenylalaninemethyl ester. Then, L-phenylalaninemethyl ester and N-protected L-aspartic anhydride dissolved in the separated organic solvent layer are reacted to give the aimed compound.
