In order to be able to fill the sausage string (10), which is filled by a filling pipe (3) of a sausage-filling machine, until it is swollen, i.e. to avoid over-rapid pulling of the skin (5) off the filling pipe (3), the said sausage string (10) passes through a first auxiliary braking ring (8). The latter essentially comprises a tube having ribs (9) which project inwards. The known braking ring (7) which is assigned to the end region of the filling pipe (3) is supported on a supporting ring (19) which is preferably manufactured so as to be integral with the first auxiliary braking ring. In addition, the braking ring (7), which ensures that the skin (5) is pulled through in a braked manner, is situated between the first auxiliary braking ring (8) and a second auxiliary braking ring (12). The latter also has ribs, which are curved at their inlet ends. The front end in each case of the gathered skin (5) is supported on these ribs. They ensure on the one hand that the gathered skin (5) is carried in a slip-free manner as the filling pipe (3) is rotated, in order to form ends. In addition, they provide a little more support for the braking effect of the braking ring (8). <IMAGE>
