PURPOSE:To obtain processed KONJAK (devil's-tongue) in the form of fish eggs of collected small granules having improved elasticity and hardness and excellent sense of eating, by stirring an aqueous solution of specific refined mannan flour while heating, maturing the solution, and dipping the resultant matured material in a cooled aqueous solution of an alkali. CONSTITUTION:Refined mannan flour in an amount of 1/20-1/16pts.wt. based on an aqueous solution of an alkali is charged into the aqueous solution at 10-12pH, and uniformly dissolved. The resultant solution is powerfully stirred, and steam at a high temperature under high pressure, e.g. 3atm and about 120 deg.C, is fed to heat the solution. After the lapse of 3-3.5min, steam at about 100 deg.C under ordinary pressure adjusted to give a given amount expressed in terms of water of the total steam feed rate is fed thereto for 3-5min, and the feed of the steam is stopped. On the other hand, 3-3.5min after starting the above-mentioned stirring, the material for processing consisting of the aqueous alkaline solution of the refined flour is slowly stirred to flow for 6-8min to complete the stirring. The solution is then allowed to stand for 30-50min and mature and the resultant solution is dipped in a cooled aqueous solution of an alkali at 10-12pH to give the aimed processed KONJAK (devil's-tongue) containing collected granules having 0.3-0.5mm diameter and having irregular surface. |
