摘要 PURPOSE:To obtain an expanded food containing uniformly and stably compounded raw materials and preservable for a long period, easily, by mixing separated soybean protein, an edible oil or fat and starch (or starchy cereals) at specific ratios, and heating the obtained uniform mixture having a specific water content with high-frequency dielectric heating. CONSTITUTION:Separated soybean protein (preferably commercialized separated soybean powder), an edible oil or fat (e.g. soybean oil) and starch (e.g. wheat starch) or starchy cereal (e.g. wheat) are mixed with each other at weight ratio of 1:(1-3):(0.4-0.8). A uniform mixture having a water-content of 20-50wt% and containing the above mixture accounting for >=70wt% of the solid content is heated by high-frequency dielectric heating to obtain the objective expanded food. The mixture is preferably incorporated further with an edible electrolyte salt (e.g. table salt), a wetting agent (e.g. sorbitol), etc. USE:It is taken as it is or used as a food raw material or raw material of daily dishes.
