PURPOSE:To obtain the titled ester useful as an emulsifier, solubilizing agent, detergent, etc., by reacting sucrose with a fatty acid chloride in the presence of a tertiary amine using a specific pyridine derivative as a catalyst. CONSTITUTION:A tertiary amine (e.g. pyridine) and/or an amide (e.g. formamide) and if necessary, an organic solvent compatible with said amine, etc., (e.g. chloroform) are added to sucrose to obtain a solution of sucrose. A pyridine derivative of formula (NRR' is amino, alkylamino, dialkylamino, pyrrolidino, piperidino or morpholino) (e.g. 4-methylaminopyridine) is dissolved in the above solution, a fatty acid chloride (e.g. palmitic acid chloride) is added thereto and the components are made to react with each other usually at -10-+70 deg.C for about <=3hr to obtain the objective ester. |
