PURPOSE:To produce readily and efficiently the titled substance, by treating a suspension of calcium fumarate with an immobilized microorganism in producing the calcium L-malate by the microbiological method. CONSTITUTION:A strain, e.g. Brevibacterium ammoniagenes, having fumarase activity is cultivated to recover clutivated microbial cells, which are than made highly permeable. The above-mentioned microbial cells are suspended in a sodium alginate solution, stirred and dropped into a calcium chloride solution to give beadlike gel, in which the microorganism having the fumarate activity is immobilized. The beads are washed and stirred with a calcium fumarate suspension to afford the aimed calcium L-malate.
