PURPOSE:To enable the refrigeration storage of tempeh for a period as long as 1-2 months even in a domestic refrigerator, by heating a fermented and aged tempeh, allowing to cool and sealing with a packaging material. CONSTITUTION:Soybeans inoculated with tempeh bacillus are filled in a rectangular box made of metallic plates such as aluminum plates and having a plurality of small holes at the circumferential plates, and are fermented and aged in the box. The fermented and aged tempeh is steamed for about 5-10min with steam to terminate the action of the tempeh bacillus, allowed to cool, taken out of the box, sealed with a heat-sealable and air-tight packaging material such as plastic film, synthetic paper, etc., and stored in refrigerated state. |
