PURPOSE:To produce an enzyme highly acting on various raw starches, by cultivating a mold belonging to Aspergillus fumigatus in a culture medium, and collecting the aimed amylase highly acting on the raw starch from the resultant culture. CONSTITUTION:A mold, belonging to Aspergillus fumigatus, and having the ability to produce amylase highly acting on raw starch is cultivated in a culture medium to collect the amylase highly acting on raw starch from the resultant culture. For example, Aspergillus fumigatus IFO-4057, IFO-6344, IFO-8866, etc., may be cited as the mold belonging to the above-mentioned Aspergillus fumigatus. The above-mentioned amylase can be produced by cultivating the mold belonging to the Aspergillus fumigatus in a solid or liquid culture medium normally used for producing amylase at about 10-50 deg.C and about 4-7pH.
