PURPOSE:To obtain tea of Angelica keiskei Koidzumi, Umbelliferae having a shape, color and luster like those of SENCHA (green tea of middle grade), by cutting leaves of the Angelica keiskei Koidzumi, Umbelliferae into plural parts, and passing the cut leaves through the respective steps of steaming cooling, rolling and twisting. CONSTITUTION:Leaves of Angelica keiskei Koidzumi, Umbelliferae are cut into plural parts (preferably 4-10 parts in the X and Y directions), steamed, cooled, rolled and twisted. The steaming is preferably carried out for 100-150sec and the cooling is preferably carried out by quick cooling. Preferably, the rolling and twisting are performed under a pressure of 1.2-1.5 times based on the pressure in the case of green tea [Camellia sinensis (L.) O.Kuntze].
