Monitoring method and monitoring device for checking the outflow of syrup in periodically operating sugar centrifuges, in which an illuminated patch is generated on the layer of centrifuged material in the centrifuge drum by means of a light or infrared-light source which radiates diffuse light and the brightness of the said patch is measured in a reflection-free manner by means of a photodiode, a high degree of brightness on a sugar surface measured for a specific period indicating the outflow of syrup and triggering continuation of the centrifuging program by means of a control box, while a small amount of brightness or markedly alternating brightness due to the relatively dark syrup indicates that there is syrup remaining in the centrifuge drum and prevents continuation of the centrifuging program.
