PURPOSE:The titled product, satisfying the standard of cooling test for salad oil according to the Japanese Agricultural Standard with a low lower fatty acid and triunsaturated fatty acid type triglyceride, improved heat resistance and high scorch preventing effect and further good cooling stability. CONSTITUTION:A heat-resistant cooking oil which is a liquid oil produced by a method for producing the liquid oil by fractionating, e.g. a raw material fat or oil with a low triunsaturated fatty acid type triglyceride content, e.g. palm oil, passing the cooling test (the oil must be clear for >=5hr in ice at 0 deg.C) specified in the Japanese Agricultural Standard, containing <=20wt.% <=12C fatty acid in the constituent fatty acids and <=30wt.% triunsaturated fatty acid type triglyceride in the total triglycerides. |
