A gelling aid, composed of granulated sugar, finely ground hydrocolloid stuck to the surface thereof and a crystalline edible acid is improved by the edible acid having roughly the same degree of granulation as the sugar and being coated by a hydrophobic layer softening at a temperature above 50 DEG C. The production is preferably carried out in a mixer and in a downstream fluidised-bed drier having a heating zone and a cooling zone. In this case, the sugar component and the acid component adhere together, so that they are no longer able to separate in later storage. |
