摘要 For the purpose of improved characterisation of the crystallisation behaviour of special fats a measuring instrument is proposed, comprising a drive motor, a torque-measuring drive, and a stirrer, which is attached to a vertical shaft, in a thermostated cylindrical measuring vessel, the stirring device in the form of a fork or a frame being guided close to the rim and leaving free the centre of the measuring vessel for a temperature sensor introduced from below. The measuring vessel can be removed and is preferably provided with a thermostated cover. In a preferred embodiment, the stirring device is frame-shaped and in its lower section ends with a web which in the region of the shaft has a cutout for the temperature sensor penetration. The stirring device frame furthermore preferably has deflectors which project in the direction of the shaft and preferably are pitched at an angle with respect to the horizontal. For the purpose of one preferred embodiment, the height of the stirrer having a torque-measuring drive is electrically adjustable, in another embodiment the torque-measuring drive can be swivelled away from the measuring-system axis about a pivot, which ensures convenient and reliable filling, emptying and movement of the measuring vessel.
