PURPOSE:To provide the titled composition composed of a specific oil or fat containing palmitic acid, an emulsifier, a fatless solid component and water, effective to restore from fatigue, capable of keeping the excellent taste and flavor and uniform emulsified state for a long period, and suitable for the effective supply of nutrient. CONSTITUTION:The objective composition can be produced by compounding (A) an oil or fat having a fatty acid composition composed of 10-30(wt)% palmitic acid, 20-50% oleic acid and 15-40% linoleic acid wherein the ratio of palmitic acid bonded to the hydroxyl group of the 2-carbon atom of glycerol is >=35% of the whole palmitic acid, (B) an emulsifier, (C) a fatless solid compo nent and (D) water. Preferably, the amount of the component A is 0.5-15%, that of the component B such as sucrose fatty acid ester, polyglycerol fatty acid ester, organic acid monoglyceride, etc., is 0.03-3%, and the amounts of the components C and D are 5-35% and 49-94%, respectively. |
