PURPOSE:To apply a lid to a material to be frozen in a freezing pan under pressure without requiring special power, by providing the freezing pan having a structure for storing a liquid in a freezing liquid tank in which a cooled sprinkling is sprinkled from above. CONSTITUTION:A given amount of fish 22 is put into a metal freezing pan 3, and an upper lid 6, having a formed recessed part (6a), and capable of storing a liquid is mounted thereon. The resultant pan 3 is transferred by a conveyor 7 and dipped in brine 20 in a brine tank (14c) to sprinkle the brine 20 from brine jetting nozzles 8. The lid 6 is applied to the fish 22 in the freezing pan 3 under pressure by the weight of the brine 20 collected in the upper lid 6, and the fish 22 is cooled.
