PURPOSE:An immobilized amylase for forming maltooligosaccharide, being immobilized efficiently, keeping a sufficiently high activity for a long period, obtained by immobilizing the amylase on a specific porous carrier. CONSTITUTION:An amylase for forming maltooligosaccharide in a range from an amylase for forming maltotriose to an amylase for forming maltohexaose is dissolved in a buffer solution to give a solution, which is blended with a porous carrier (e.g., DUORAITO resin) which has >=80% affinity shown by the formula for an enzyme, 0.05-1.5mm particle diameter, 20-300m<2>/g specific surface area of fine pores and >=100Angstrom pore diameter while stirring. Then the blend is separated into solid and liquid by filtration operation, the prepared immobilized enzyme is washed with a buffer solution and 1-40mg calculated as enzyme protein of amylase for forming maltooligosaccharide is immobilized based on 1g carrier.
