<p>A phosphate-containing edible acid solution which is of use in preventing corrosion of apparatus in the food processing industry. The solution may be made in concentrate form. A diluted solution either prepared from the concentrate or independently may be used in the generation of skins on protein-containing products, for instance sausages, using such apparatus.</p> |
