PURPOSE:To obtain a protein, e.g. soybeans, efficiently without using chemical substances having problems in flavor and hygiene, by treating a protein- containing substance under electrolytic reductive aqueous system, and fractionating the treatment product into a fraction consisting essentially of 7S protein and a fraction consisting essentially of 11S protein. CONSTITUTION:Water is added to extract soybeans at ordinary temperature while heating to prepare soybean mild, which is then put into a cathodic bath of an electrolytic reduction apparatus having the cathodic bath and an anodic bath. A sodium chloride solution is then put into the anodic bath, and both baths are connected with an agar gel bridge containing sodium chloride to pass a current while stirring the soybean side. The condition is transferred to 5.5-7.0pH and <=20 deg.C to fractionate the soybean mild into an insoluble fraction and water-dispersible or water-soluble fraction. Thus, the soybean milk is fractionated into a fraction consisting essentially of 7S protein and a fraction consisting essentially of 11S protein.
