PURPOSE:To bake bread containing fructooligosaccharide, by baking bread from wheat flour, water, the fructooligosaccharide, glucose, etc., using a sucrose nonfermentative Saccharomyces cerevisiae having bread baking adaptability. CONSTITUTION:A novel sucrose nonfermentative baker's yeast Saccharomyces cerevisiae IL-1 (FERM-P No.8056) having bread baking adaptability is used to bake bread. Main components consisting of wheat flour, water, fructooligosaccharide, hexasaccharide, e.g. glucose, and the above-mentioned baker's yeast are added and mixed to bake the bread. The use of the yeast makes the fructooligosaccharide added to the raw material remain without decomposition. |
