PURPOSE:To produce the titled substance easily, industrially and advantageously using an inexpensive raw material, by reacting an enzyme with the L-form of an N-acylphenylalanine alkyl ester in the presence of water. CONSTITUTION:Aminoacylase derived from molds of the genus Aspergillus as an enzyme is reacted with a mixture of the L-form (expressed by the formula) with the D-form of an N-acylphenylalanine alkyl ester in the presence of water. An organic solvent immiscible with water is brought into contact with the reaction mixture to extract and separate the L-form, D form or a mixture thereof of the N-acylphenylalanine alkyl ester into an organic layer. Crystals of the L-phenylalanine is separated from the reaction mixture and the aqueous layer containing the enzyme is circulated through the reaction process for use. |
